Day 6: Feb 29

Today was overall a lazy day. We headed to the drive through at Jack In The Box and got some breakfast for lunch haha.

Nothing less healthier than late night munchies! Quick drive to the nearest Taco Bell for a 7-Layer burrito. One of the few options that Taco Bell has for those who are vegetarian.

Day 5- Feb 28: NO PICTURE

Today I wanted to visit my brother in Riverside, so me and my wife headed over there. We were just hanging out, drinking, when we decided to have some pizza and the cheapest place (obviously) was Little Caesars. As I am starting my road to becoming a full on vegetarian, I am slowly learning what I can eat, or better yet, CHOOSE to eat. So, we bought a couple of pepperoni pizza's and some wings. I was okay just removing the pepperoni off the pizza and calling it vegetarian, but as the night went by, I started to think whether I would be okay with this in the future. Any who, I forgot to take a picture of my food today, and decided to just get one off of google (SORRY!).

Day 4- Feb 27

I am back with another adventure of Chronicles of a Vegetarian. In today's episode, I make some home made quesadillas (slightly burned) and heat up an individual frozen pizza, which I had already started eating haha. YUM!

As the day goes on and my stomach gets hungry, my wife and I decide to go have a dinner date. I usually do not mind where we go so today my wife decided to go to a Salvadorian restaurant. I ordered a bean torta as well as a bean and cheese popusa. Both were delicious!

Day 3- Feb 26


So this morning I participated in a student panel at a school in orange county. I had no was not expecting to be fed, so there was no way of me letting them know to save me a vegetarian option. So, for breakfast I had this delicious burrito (which was only egg!, cause I had to take out all the meat, as you can SEE!), and a slice of watermelon. I was more than appreciative since I didn't eve know I was going to have FREE food. It was unfortunate, however, that this meat had to go to waste, since I honestly did not have anyone to give it to (or at least would accept it).

Later in the day, I went to go eat with my wife. She was craving Mongolian food so we went to the mall where they cook the food in front of you. They had a variety of meat (that i really wanted!!!) but I obviously went with the tofu option. You can see the big chunk of tofu at the bottom of the pic. I unfortunately did not eat all the tofu, cause it was really too much and could not handle it hahaha. After this meal, I was stuffed for the night! Overall, the food was good but the service sucks.

Day 2- Feb 25

One of my favorite foods to eat were these little pizzas that the nearby grocery store sells. I had just boughten some a few days before I decided to go vegetarian so I did not get a chance to enjoy them. I decided to have one and just take off the little pieces of meat that it had. I was being very picky so I removed everything and anything that looked like meat just to be sure!

Before I left the house, I remembered that I had bought some mangos that I was using to make shakes on my nutribullet. I did not make time to do lunch so I decided to take these as snacks. I had met up with the organization that I am with to help fundraise and I ended up sharing these mangos with some of the other board members. They were not as good as I wanted them to be, but I still ate them haha.

11:45am

For dinner, I decided to go with my friends, David and Jenna, to David's place to eat. We stopped by at the grocery store and bought a few items, including a seven layer dip. All three of us are vegetarian. To be honest, I do not remember what we said we were going to make while we were at the store, but this is what we ended up making. Jenna had cut up some tortillas and fried them, making them into chips for the seven layer dip we had boughten. We ended up making potatoes and pasta. We also had boughten some cheese and a loaf of baguette bread and made these cute little appetizers. Overall, it was delicious!

Day 1- Feb 24

Today was my official day of starting Vegetarian!! WOOOO!

After leaving the house, I attended an event for one of the organizations that I am a part of and at this event they had food. So the first meal I had for the day was pasta, salad, and garlic bread (all free!). Unfortunately, I forgot to take a picture of my plate (which included the salad) so I asked my friend if I can take a picture of his plate so I can at least have something.

I normally do not eat anything for breakfast, because I never make time (really bad lol). So for today, I actually made a quick effort to take something for lunch to eat. I ended up making a quick salad to go.

Time: 2:51PM

After being on campus for a few hours, I started to get hungry again. I did not want to leave campus to go eat so I decided to go to the Tortilla Fresca located at the Phoenix Food Court. I decided to order a burrito (without the meat). I got black beans, rice, cheese, lettuce, tomato, and asked for guacamole (which was an extra charge). Overall, it was a good burrito - even though I was really craving meat hahah.

The Night Before


After my friend became a vegetarian for a few weeks, I considered going meatless as well. I had tried leaving red meat and only eating chicken, but I was inconsistent and it did not work out. After a long epiphany, I said to myself "Fudge it. I'm just going to go cold turkey." meaning I would cut out all meat.

I had already eaten meat today, but wanted to start on a clean slate so I decided that tomorrow will be my first official day as a vegetarian. Today I started to let everyone know, starting with my wife, that I was going to embark on a meatless journey.

As I was trying to decide what I was going to eat for dinner tonight, I said, "why don't I have a warm up?" I went to Chipotle for dinner and instead of having meat, I had a bowl with the sofritas option which is organic tofu. For those of you who don't know, the guacamole is free when you choose the vegetarian option.
